Together with De Laet & Van Haver, we developed ravioli filled with flavorful picanha meat. Carima cattle from Modena are milked for five years for the production of Parmesan cheese, after which they spend a year grazing in the pasture before being slaughtered for their meat. The tail section of the Carima cow is brined, woven, and smoked over beech wood. Combined with creamy goat cheese, sweet figs, and a spicy touch of muhammara, this refined ravioli is bursting with flavor!
