Ravioloni forest mushroom truffle with cream sauce, celeriac and mushrooms

Cook a dry compote of onion with pedro ximenez, vinegar, sugar and salt. Pimp our basic cream sauce with parmesan and truffle, season with pepper. Cook the ravioloni and pass through the sauce. Ideal as an appetizer (3 pieces) or main course (5 pieces).
