Gnocchi are the famous Italian dough cushions made from flour and mashed potatoes. Boil them in salted water and rinse well. Then fry them in the pan with some olive oil. This will make the outside nice and crispy and the inside will remain soft. Combine the gnocchi with crunchy vegetables such as green asparagus, peas and broad beans for a deliciously fresh dish.
